Scope: 15,000+ square feet turnkey restaurant buildout for Danny Meyer's Union Square Hospitality Group in the new Martha Washington Hotel located at 29 E 29 Street. Originally built in 1903 for unmarried women, the ground floor was lowered 3 feet to accommodate on grade entrance to hotel lobby and restaurant space. This landmark building features two limestone porticos that were removed, restored and reinstalled. Soaring seventeen foot ceilings provide unmatched openness while the two Mugnaini wood fired pizza ovens dominate the open kitchen. Custom-built Infierno 96 solid fuel grille manufactured by Grilleworks USA, the first of its kind on the east coast, anchors the open plan cookery. Over 8,000 square feet of cellar cooking space houses a pastry kitchen, butchery and 2,000+ square feet of custom refrigerated coolers. Lounge bar and private dining room are also part of the buildout while a second floor meeting and event space features banquet facilities and 1,800 square foot roof terrace to accommodate 200+ guests. Additional phases have been planned for 30th street storefront to include a gelateria and small-seat fine dining restaurant, also operated by USHG.
